Chocolate Quinoa Cookies

OMG These are amazing …….if you struggle to eat healthy and (like me) have a sweet tooth then this super healthy superfood recipe will appeal to you.
I had some quinoa in my cupboard , looking rather dull and uninspiring…..I couldnt muster up the desire to cook it ……UNTIL ……I thought let’s try something sweeter and see what happens…..hey presto chocolate quinoa cookies appeared ( like magic ! ).

So simple, i unexpectedly got an hour free today and these no bake delights took just 10 of those 60 mins ( excluding the cooking of quinoa …..which is essentially just leave to boil in a pan !). So here it is ………

INGREDIENTS
1/2 cup coconut oil
1/2 cup maple syrup
between 1/3 and 1/2 cup organic cocoa powder ( I used green and blacks )
1/2 cup nut butter ( almond )
1 cup cooked quinoa
To sprinkle on too I used Himalayan salt and a shaving of 85% cacao chocolate and a sprinkle of grated pecan nut but you can choose what suits you.

DIRECTIONS
Melt the coconut oil, maple syrup and cocoa powder in a pan over a low heat. Stir well until combined.
Then add the butter and stir Well.
Mix in the cooked quinoa.
Line 1 or 2 baking sheets with parchment paper. ( I used 2)
Spoon onto the paper and shape into cookie shapes.
Add toppings and then pop into freezer for as long as you can bear to wait.

 

Serve + enjoy = That’s it!
ps – I started with 12 of these, and I now only have 5 to photo ! …….thats just how yummy they are !
A lovely health snack or guilt free treat which is packed with protein, fibre, iron, magnesium and has ALL 9 of our much needed amino acids!!!!!

Moringa Power Balls

These Moringa Power Balls are amazing!!!!

I love making healthy alternatives to my favourite foods, and these Moringa power balls are just bursting with antioxidants. Moringa is great in smoothies and power balls. I make these Moringa power balls and keep in the freezer.

They are a great snack , the kids will love making them ( so easy !h and I use them when I am training as they have far more protein and energy than these overpriced commercial ( and artificial ) power drinks, snacks and protein powders (All of these are highly processed and protein powders are often heated to the point that the protein is denatured, which makes it nearly impossible for the body to use. They increase acidity and toxicity in the body, which can lead to inflammation and disease).

What is Moringa I hear you ask …..well this wonderful dried powder comes from the leaves of the Moringa tree which is prized in Ayurvedic medicine because it has so many health and healing properties ;

– naturally gives an energy high which is not sugar based.
– controls blood sugar ( good for diabetics ).
– it has the highest protein ratio of any plant so far identified.
– has 18 ( of the 20) amino acids he body needs.
– it is antiviral , anti inflammatory and antibacterial so supports immune function.
– lowers blood pressure.
– The Moringa tree purifies water , binds itself to toxins therefore detoxifies the body.
– binds itself to toxins.
– 7 x the vitamin C of oranges, 4 x the calcium of milk, 4 x the vitamin A of carrots, 3 x the potassium of bananas, and 2 x the protein of yogurt.
– over 90 other nutrients recorded to date.
– no adverse reactions ever recorded.
– good for auto immune conditions , diabetics, arthritis, ulcers, helps sleep, blood pressure , pain , inflammation ……have I sold you on Moringa yet !!!

INGREDIENTS
200g dried fruit ( I use sultanas , untreated or dates )
200g nuts ( I use almonds or walnuts as I prefer the benefits these give ) soak in water for 4 hours and rinse to release the physic acid
2 tablespoons Moringa *
2 tablespoons raw cacao *
1/2 teaspoon Madagascan vanilla essence *
* these are to my taste but adjust to your own. I also enjoy adding peppermint essence but use the flavours you like or leave ” naked” as the cacao will add depth of flavour too.

DIRECTIONS
Drain nuts and whizz up in a blender until well chopped.
Add the fruit , Moringa , cacao and essence and blend.
You make wish to add a little raw honey too , if so blend.
Roll into balls and pop into the freezer.
They will not freeze solid and can be eaten as a snack straight from the freezer.
Experiment and roll the balls in some desiccated coconut or dried goji berries to alter the taste and texture.

Vegan roasted veg with lemon tahini sauce

Vegan roasted veg with lemon tahini sauce

This vegan roasted veg with lemon tahini sauce is simply delicious. It is vegan, unprocessed and a great source of antioxidants. The combination of these veggies give you an abundance of vitamin C, K, B6, fibre, omega-3, protein and magnesium.The broccoli is also an alkalising food which is great for conditions such as auto immune conditions, RA, CFS, ME and even cancer prevention. The garlic is anti viral and antibacterial..great for boosting the immune system at this time of year…..and on top of all this goodness it tastes heavenly!

INGREDIENTS
1 cauliflower, cut into florets
2 tablespoons tahini
1 1/2 tablespoons coconut oil tsp. olive oil
1 tablespoon fresh lemon juice
1 cloves garlic
pinch of himalayan salt and ground black pepper (adjust to your taste)

DIRECTIONS
Preheat oven to 230c . Melt the 1 tablespoon of coconut oil and toss the cauliflower and broccoli in the oil, add the salt and pepper to season then pop in the oven for about 10 – 15 mins depending on how much “bite ” you want on your cauli / broccoli.

Heat the other 1/2 tablespoon of coconut oil in a pan and then add in the garlic (minced) to cook for a couple of mins before slowly adding the tahini , lemon and a little water to allow the sauce to adjust to the desired consistency. Simmer for a couple of mins before removing and stir well before drizzling over the cauliflower and broccoli.

Serve + enjoy = That’s it!
ps – you can add some fresh herbs like parsley or coriander to garnish or add some toasted pine nuts or sesame seeds. Be adventurous and try a few options to suit you. I garnished mine here with parsley and chilli.

Healthy Gluten Free Chocolate Brownies

I love making healthy alternatives to my favourite foods, these healthy gluten free chocolate brownies are amazing and gluten free. Coconut flour has a lovely subtle flavour of sweetness, and is really rather excellent for you and of course….gluten free !
These healthy gluten free chocolate brownies are super easy to make, another one of the recipes that you can have fun making with the kids and know that when you are eating it you are enjoying good real food!!!.I loved both making and eating these super healthy gluten free chocolate brownies..i hope you enjoy it too….

INGREDIENTS
5 large free range eggs
1/2 cup of coconut oil
2 tablespoons raw (unpasturised) honey
1 cup coconut flour
1 teaspoon baking powder
1/3 cup raw cacao
11/tablespoons homemade apple sauce

DIRECTIONS
Beat all the eggs together in a large mixing bowl.
Sieve in the coconut flour, raw cacao and baking powder.
Melt coconut oil (just sit the cup on top of a radiator or place the cup into a bowl of hot water and it will soon melt) then add to the above mixture.
Mix it all up until there are no lumpy bits.
pour into a bread mould or a baking mould of your choice and cook at about 180c for approx 40 mins (use a skewer to check the cake is cooked through).
Leave to cool (if you can wait that long!) and cut into squares or slices.

Serve + enjoy = That’s it!

Lentil Curry Loaf

Lentil Curry Loaf

This lentil curry loaf recipe was given to me by a dear friend…..OMG it is amazing!!!!
Lentils are a great source of protein, fibre , iron and i added chilli flakes, turmeric , garlic and a little coconut oil to make super anti cancer , antioxidant healthy meal.

This lentil curry loaf is great for lunch or dinner but can be parcelled up and packed into a lunchbox or frozen if you are making for one.

INGREDIENTS
1 tin lentils
2 tablespoons coconut oil
3 large free range eggs
250grams wild rice (or tilda straight from the packet rice if you are feeling lazy…try coconut basmati)
1 garlic clove pressed
1 tablespoon turmeric
1 tablespoon chilli powder (adjust according to your taste)
1 tablespoon curry powder (adjust to your taste)
Good pinch of himalayan sea salt and ground black pepper

DIRECTIONS
Preheat your oven to approx 200c
Mix it all together ensuring the eggs are well blended into the mix as this is the “binder” that sticks it all together.
Pop into a silicone cace mould or tin and cook for approx 40 mins.

Serve + enjoy = That’s it!
ps – i love this with a big side of sautéed greens (try kale, broccoli and baby spinach sautéed with garlic and a generous spoon or 2 of coconut oil)

Wheat Free Coconut Bread

I do love bread, but i do not enjoy the bloated sluggish feeling i get when i eat it so i decided to have a go at making some wheat free bread. I had some coconut flour to hand and i love the subtle flavour it gives to recipes. I loved both making and eating this wheat free coconut bread..i hope you enjoy it too….

INGREDIENTS
6 large free range eggs
1/2 cup of coconut oil
2 tablespoons raw (unpasturised) honey
3/4 cup coconut flour
1 teaspoon baking powder
1/2 teaspoon himalayan salt

DIRECTIONS
Beat all the eggs together in a large mixing bowl.
Sieve in the coconut flour and baking powder.
Melt coconut oil (just sit the cup on top of a radiator or place the cup into a bowl of hot water and it will soon melt) then add to the above mixture . Add the salt too.
Whisk it all up until there are no lumpy bits.
pour into a bread mould and cook at about 180c for approx 40 mins (use a skewer to check the bread is cooked through).

Serve + enjoy = That’s it!
ps – I love it with cheese melted on top but add your own topping to suit.

Homemade Raw Naked Bars

I love naked bars, they have no added nasties in them and just simple natural ingredients. So i thought , lets have a go at making some homemade raw naked bars.
These homemade raw naked bars are vegan with no butters, eggs etc added so everyone can enjoy!
They took me less than 10 mins to make , and if you prefer rather than making raw naked bars you could roll into balls and make raw naked bombs instead!!
They are delicious!
My photography skills are lacking as you may notice from my other recipes too….hey ho…keeping it real!

INGREDIENTS
2 Cups Cashew Nuts (soak for 1-2 hours before hand and then rinse through)
2 Cups Mejool Dates (rinse through)
1 tablespoon unpasturised honey
1 teaspoon madagascan vanilla extract
1 tablespoon raw cacao powder
I added 4 drops of wild orange oil but you can add anything else you prefer
Mix it up and try pumpkin seeds, cranberries, raisins, coconut flakes or different nuts (the important thing is to keep the ratio of dried fruit and nuts as 1:1)

DIRECTIONS
Whack it all into a processor or blender and blitz to your desired consistency.Line a dish with cling film and spread and firm it to the base.
Leave to set for about an hour in the fridge or freeze then cut into strips. They will keep in the fridge for about 5 days or keep frozen and take out as you want to eat.

Beau-Chi Vitality Bomb Recipe

These Beau-Chi Vitality Bombs are just yummy, raw goodness.

Seriously they are loaded with antioxidants and good fats that will literally make your skin glow and also a fantastic source of proteins and raw plant vitality. If you struggle mid morning or mid afternoon then these babies are going to give you super powers!

What could be better than this ?

All the ingredients i have used are RAW , unprocessed food in its wonderful natural , as its meant to be state.

INGREDIENTS
5 Tablespoons Raw unpasturised honey
5 Tablespoons Raisins
5 tablespoons coconut oil softened
4 Tablespoons Tahini Paste (you can use a different nut butter if you prefer)
200grams Cashews (soaked in filtered water for 2 hours then rinsed)
3 Tablespoons pumpkin seeds
1 tablespoon chia seeds
3 tablespoons raw cacao powder
3 tablespoons raw dried coconut flakes

DIRECTIONS
Whack it all into a processor or blender and blitz to your desired consistency. Roll into balls and place on parchment paper. I added coconut to decorate as i love it but you could add goji berries or hemp seeds or sesame seeds to your liking. Have a play , choose different nuts they will all work.

Serve + enjoy = That’s it!

Healthy Zucchini Chrisps

Who would have known just how delicious a plain old zucchini would be as a tasty snack. These lovely veg are really low in calories and a good source of potassium ( to reduce blood pressure ) and also vitamin C which is great for immune support and cell regeneration .

I really enjoyed making these and found shaving the strips really therapeutic.
They did seem to take a long time to cook ( or maybe that was the impatient part of me who just couldn’t wait to scoff these delightful and healthy treats !).
You can change the seasoning to suit you, but here’s what I used.

INGREDIENTS

1 zucchini
olive oil
Himalayan salt
Ground black pepper
Apple cider vinegar

DIRECTIONS

Heat oven to 220c
Use a peeler to shave strips of zucchini or if you prefer oval Chrisps them slice wafer thin.
Mix olive oil salt, pepper, and some vinegar in a small bowl and then coat the strips or slices.
Use the grill as a baking tray (so this the bottom of the Chrisps do not stay soggy or stick and burn ).
Cook for about 40 mins , checking as some will crisp faster than others.
You only get a serving for one out of a large zucchini. They taste so great I’m just about to make some more!

Cauliflower Gluten and Grain Free Pizza

This recipe is just amazing!

The picture does not do it justice , but it is Devine!
It is super healthy and wheat and grain free too. The cauliflower becomes the pizza base so you are taking so many less calories but adding loads of nutrients in ! What’s not to love about this lovely little meal. You really feel like you are having a lovely treat.

Cauliflower is a really good source of fibre, it is loaded with vitamin C (antioxidant , collagen and neural support of cells ) , K ( bone and blood support) , B6 ( liver and blood support ) and a good source of omega 3 (heart health) and folates ( excellent for central nervous system health ) .

INGREDIENTS
Rapeseed oil
1 cauliflower
2 eggs
Feta cheese
Himayayan salt
Ground black pepper
Tomato paste or blended fresh tomatoes to make the sauce.
Handful of picollino or cherry tomatoes, sliced in quarters
Slices of onion
Handful of kale
1 cloves garlic crushed or grated
1 teaspoon crushed red pepper flakes
1 teaspoon oregano
1 teaspoon basil

DIRECTIONS
Heat oven to 180c Line a baking sheet or oven dish with baking paper and grease with the rapeseed oil.
Grate the cauliflower or whizz with a blender.
Then Mix in the eggs a bit of feta cheese , salt, pepper,garlic  and herbs.
Once combined, pat into a round on the oiled baking paper then bake until golden and the base is dried out. Turn and bake the underside. ( approx 15 mins each side)
I found if the base was too large then it broke up when I turned it so doing smaller individual pizza bases makes it easier to flip the base and cook both sides.
Top the pizza with the sauce, chopped tomatoes, onion, kale and more feta. Sprinkle with chilli flakes and Bake in the oven until melted for approx 5 mins.
