Vanilla and blueberry chia seed pud

I love love love chia seeds.

These tiny seeds are a powerhouse of energy. They are packed full of protein , fibre, high in omega 3 , calcium and then a good source of magnesium a much overlooked mineral that most of us are deficient in . They are an antioxidant superfood and they are so filling and great for helping you lose weight.

 

So here’s how I make this lovely pud, you can change the ingredients and it is even great for breakfast. It really sets you up for the day. If you want to make a big batch then it keeps for up to 5 days in the fridge.

INGREDIENTS
1/2 cup of chia seeds to 2 1/2 cups of almond milk or coconut milk. I use coconut milk it’s delicious and subtly sweet.
1 teaspoon of local honey.
1 Vanilla pod.
Handful of blueberries.

DIRECTIONS
Place the chia seeds and honey into a bowl and then scrape the beans out of the vanilla pod by first slicing it in half and add to the bowl.
Pour the milk over the seeds and give it a stir.
Pop it in the fridge and give it another mix after an hour then leave to set overnight.
The chia seeds will gradually expand and absorb the liquid.
Spoon into a bowl and add blueberries to the top to garnish.

Serve + enjoy = That’s it!
