Carrot & sweet potato champ with super greens

Sweet potatoes are simply delicious and I cannot get enough of them!  I have mentioned before that Sweet potatoes are abundant in beta carotene , they have a very low glycemic index ( unlike white potatoes which raise blood sugar), they are fibre dense , loaded with vitamin C & B , manganese, potassium.

Both kale and broccoli are a great source of vitamin A, K and C , fibre , and the broccoli also adds folates , chromium and both are great for lowering cholesterol.

The coconut oil is a great source of good fats and is actually good for weight loss and has been shown to help with digestive complaints. As it is anti bacterial it is a great detoxifier too. The nut butter adds protein to the meal giving overall balance to the plate. If the nut butter and sweet potato combo is not to your taste then grate some feta over the meal or have a glass of milk to balance your proteins out,v

So  here is another extremely simple and nutritious recipe for you to try. All the ingredients are natural and good for you ,without processing so your body can break down the healthy stuff easily so it is actually detoxifying your body.

INGREDIENTS serves 2
1 Sweet potato
2 carrots
Coconut oil
2 tablespoons of organic nut butter ( I used peanut)
Himalayan salt
Kale
Broccoli
Spring onion

DIRECTIONS
Bake the potato whole for about 40mins at 215c until soft .
Par boil and then roast carrots for about 30mins . Roasting gives a richer flavour. Again the carrots should be pretty soft.

Chop up the spring onion and Mash the carrots , sweet potato and nut butter together.

Par boil the broccoli and kale for about 6 mins so the broccoli still has bite then wok fry for a few mins in coconut oil and add a little Himalayan salt if you like.
Himalayan salt is the only salt that is actually good for you, it is abundant in minerals.

Serve + enjoy = That’s it!
