I absolutely adore hummus, it is heavenly and i love kale too so deceived to have a go at blending my 2 favourite things together and the result is the most amazing kale hummus recipe…sublime!
Kale is a powerhouse of vitamins K,A,C as well as iron, fibre, calcium and protein and teamed with chickpeas you have even more fibre, protein plus folates,iron and zinc. This took me literally 5 minutes to make!
INGREDIENTS
3 cups chopped kale
1 can of chickpeas rinsed and drained
¼ cup extra virgin olive oil , i used infused with chilli and also used a glug of hemp oil
¼ cup fresh lemon juice
4 cloves garlic , peeled
¼ cup tahini paste
Good pinch black pepper
Good pinch himalayan salt
DIRECTIONS
Whack it all into a processor or blender and blitz to your desired consistency.
Serve + enjoy = That’s it!
