This recipe is just amazing!

It is super healthy and wheat and grain free too. The cauliflower becomes the pizza base so you are taking so many less calories but adding loads of nutrients in ! What’s not to love about this lovely little meal. You really feel like you are having a lovely treat.
Cauliflower is a really good source of fibre, it is loaded with vitamin C (antioxidant , collagen and neural support of cells ) , K ( bone and blood support) , B6 ( liver and blood support ) and a good source of omega 3 (heart health) and folates ( excellent for central nervous system health ) .
INGREDIENTS
Rapeseed oil
1 cauliflower
2 eggs
Feta cheese
Himayayan salt
Ground black pepper
Tomato paste or blended fresh tomatoes to make the sauce.
Handful of picollino or cherry tomatoes, sliced in quarters
Slices of onion
Handful of kale
1 cloves garlic crushed or grated
1 teaspoon crushed red pepper flakes
1 teaspoon oregano
1 teaspoon basil
DIRECTIONS
Heat oven to 180c Line a baking sheet or oven dish with baking paper and grease with the rapeseed oil.
Grate the cauliflower or whizz with a blender.
Then Mix in the eggs a bit of feta cheese , salt, pepper,garlic and herbs.
Once combined, pat into a round on the oiled baking paper then bake until golden and the base is dried out. Turn and bake the underside. ( approx 15 mins each side)
I found if the base was too large then it broke up when I turned it so doing smaller individual pizza bases makes it easier to flip the base and cook both sides.
Top the pizza with the sauce, chopped tomatoes, onion, kale and more feta. Sprinkle with chilli flakes and Bake in the oven until melted for approx 5 mins.
